Hi Jacob,
today I listened to your podcast and I was just thinking about the eventuality of serving canapés style cheese and dessert courses. Often small desserts are more effective in tempting sweet teeth ;)
What do you think?

@ Alessio,

I think its a great idea. Desserts scale really well to miniature bites, and cheese is even easier. Here are some ideas…

For dessert:

Minature Devils Food Cake
Strawberry Shortcakes
Cheese Cake Filling Piped on Gram Cracker

For Cheese (all served on either bread or crackers):

Bruleed Goat Cheese With Pistachios
Gorgonzola Dolce with Candied Pecans and Pickled Red Onion
Smoked Gouda with Heirloom Tomatoes and Basil

Hope these ideas helped. Let me know how they turned out.
